Stitched up Stilton and Peach Salad


I can't believe how much money we spent on cheese yesterday at Bewdley Sunday market.  So, with blue cheese in mind I've decided it has to be a cheese and fruit combo salad today. 




Ingredients
4 firm, ripe peaches, sliced lengthways into 1cm slices
2 tbsp olive oil
1 tbsp white wine vinegar
1 tbsp honey
1 teasp dijon mustard, optional
Mixed salad leaves
150g stilton or other blue cheese, crumbled
Handful of walnut halves
Crusty bread, to serve (optional).

Method
Put the peaches in a bowl and drizzle with 1 teasp of the oil. Heat a griddle pan, then cook the peaches, in batches, for 1 minute on each side. Set aside to cool.

Mix the remaining oil, vinegar and honey. Toss the peaches, leaves and cheese, divide between 4 plates and drizzle with the dressing. Serve with bread, if you like.
