Wonton Soup with Bok Choi

A trip to Wing Yip Chinese Supermarket has provided the pre made wontons parcels, so it will only take a jiffy to put this classic soup on the table.


Ingredients
Pork and prawn wontons, 3-5 each
1.2 litres good quality chicken stock
1 tbsp light soy sauce
1 teasp sesame oil
2 bok choi, quartered
Chopped spring onions and some finely sliced red chilli(optional), to garnish.

Method
Put the stock, soy sauce and sesame oil in a large saucepan and bring to a simmer. At the same time, bring a large pan of salted water to the boil and poach the wontons and bok choi in it for one minute or until they rise to the surface.  Remove the wontons and veggies immediately and transfer them to the stock.  Simmer them in the stock for two minutes.  Serve in individual bowls, sprinkled with the spring onions and chilli if you are using it.
