This is a healthy version of fast food using ingredients
that makes a quick, simple, and tasty supper.
I am working in London today (yes I do have a proper job, honest) so had
to quickly chop up the chicken breasts and mix together natural yoghurt with
tandoori mix and pour it over the chicken before going to bed last night. The chicken will marinate all day and be ready
for Hubby to cook this evening. I
haven’t told him he’s cooking yet!
Ingredients for the
Chicken
400g chicken breast, cut into thin strips or deboned thighs if you can get them
3 – 4 tbsp. tandoori mix
1 tbsp. lime juice
2 small pots of natural yoghurt
8 large flour tortillas, or pitta bread
Salad of choice, I’ll be using lettuce, cucumber, white cabbage, sweetcorn and carrot
Skewers, optional.
Raita
1 pot of natural yoghurt
Half a cucumber with the seeds scraped out then finely
chopped
1 tbsp. finely chopped mint or a teasp. of mint sauce from a
jar
Lemon or lime wedges to serve.
Method
Combine the lime juice, tandoori mix and yoghurt in a bowl
and add the strips of chicken, ensuring it is coated with the mix. Cover and leave in the fridge overnight or
for at least 2 hours if you can.
When you are ready to cook it, cover the grill tray with
foil and whack your grill to its highest heat and place the chicken pieces onto
the foil on skewers if you want or on their own. Once cooked through put to one side to keep
warm.
Heat up the tortillas following the instructions on the
pack.
Place the chicken,
tortillas, salad, lemon wedges and raita onto the table and let your tribe
build their own meal. It’s lovely with a
cold beer!
