Posh Tomatoes and Cheese on Toast

I love the tomatoes from Drew's of Little Whitley and this simple but classy dish puts them centre stage.  You could quite easily dress it up even more with olives and anchovies but I like to let the flavour of the tomatoes burst through.

Ingredients
Mixed variety of tomatoes, the best you can find and ideally one's that haven't been refrigerated as this kills the flavour about 500g
I ball of mozzarella cheese, I'm using Granorola
A couple of gluts of rapeseed or extra virgin olive oil
A splash of red wine vinegar
Salt and freshly ground black pepper
1 garlic clove
2 large slices of top notch ciabatta, toasted
A large handful of basil leaves.

Method
Roughly chop or slice the tomatoes and place them in a bowl.  Add the vinegar and oil to the tomatoes and season generously.  Leave to one side for 15 minutes to allow the flavours to develop.
Toast the bread. Halve the garlic clove and rub it onto the toast.  Check the seasoning of the tomatoes and adjust if needed.  Tear the basil leaves and toss through the tomatoes.  Spoon the lovely tomatoes onto the toasts with the juices.  Tear up the mozzarella and share across the plates.  Drizzle with extra oil and a final flourish of black pepper and dive in.
