Thai Style Steak with Garlic and Chilli

Spending time with my lovely girl was my priority today and we've almost melted the Amex!  Anyway, this is possibly the least complicated Thai dish I've ever cooked, all the great flavours of Thai food, without too much faffing around.  I'm using rump steak, but it works really well with any lean meat.  I'll serve it with noodles and beansprouts, a sort of pad thai.



Ingredients for 4 
2 tbsp peanut or sunflower oil
3 large garlic cloves, finely chopped
500g lean rump steak, thinly sliced
1 red pepper, deseeded and thinly sliced
2 tbsp fish sauce
1 teasp sugar
2tbsp light soy sauce
2 large fresh red chillies, finely sliced
1 lime, using the zest and juice
2 spring onions or chives, finely sliced as garnish
A handful of cashew nuts, optional.

Method
Heat the oil in a frying pan or wok until a light haze appears.  Add the garlic and stir fry until just golden.  Add the beef and and red pepper then stir fry briefly.  Add the fish sauce, soy and chillies, stirring all the time. Once the steak is just cooked add the cashew nuts, lime juice and zest and serve sprinkled with the spring onions.
