Chicken Gyoza

Break out the chopsticks guys, this has to be the simplest meal of the year so far as it requires hardly any cooking.  I first tasted this last year in Hong Kong and just loved them, I think in the UK they are called pot stickers.....Sounds good so far?  I bought the frozen gyoza from Wing Yip supermarket and just tarted then up with lovely dipping sauces and a zingy salad.  It was a definite hit with the family at the weekend.  


Ingredients
1 pack of frozen gyoza, or make your own if you have time
4 tbsp peanut oil
Water
Chinese leaves, thinly shredded
Cucumber, peeled, deseeded and sliced
Zest of a lime grated
4 spring onions sliced at a jaunty angle
1 long red chilli, deseeded and thinly sliced.
Dark soy sauce
Sweet chilli dipping sauce

Method
Into a large frying pan add 1 tbsp of the oil and boiling water just to half way up the sides of the dumplings.  Simmer for 8 minutes. Most of the water should have evaporated by now but if not drain most of it away.  Add the remaining oil, turn up the heat a little and fry until golden and crispy on the base but still soft on top, this only takes a few minutes.  Drain on kitchen towel and serve on the bed of leaves, spring onions, cucumber and chilli.
