Stir Fried Chicken with Broccoli and Cashew Nuts

Hubby and I are treating ourselves to dinner at the Hop Pole Inn tonight so our daughter will be dog sitting and munching through this simple Thai stir fry.


Ingredients
2 tbsp sunflower oil
2 garlic cloves, finely chopped
225g chicken breast, finely sliced
Broccoli, cut into small florets for speedy cooking
1 tbsp fish sauce
4 dried chillies, cut into small hoops
2 heaped tbsp roasted cashew nuts
1 tbsp oyster sauce
1/2 teasp sugar.

Method
In a frying pan or wok, heat the oil and fry the garlic until golden.  Add the chicken to the pan, stir and cook until the meat is slightly opaque.  Stirring after each addition, add the remaining ingredients, starting with the broccoli, cook until the chicken is cooked through and serve with some egg noodles drizzled with a few drops of sesame oil.
