Ingredients
2tbsp fennel seeds
2 tbsp cumin seeds
2 tbsp coriander seeds
1/2 tbsp fenugreek seeds
1/2 tbsp black peppercorns
2 cloves
1/2 a cinnamon stick
2 cardamon pods
Salt and black pepper
Lightly toast all the ingredients in a pan over a gentle heat before blitzing in a coffee grinder until a fine powder. Hard work if doing it by hand. Rub into your chosen meat or use in the Lamb curry recipe.
