Hot chorizo, avocado and mozzarella salad

Ha! Monday night's supper is usually something involving left overs or food that needs eating up.  Not this time! Both Hubby and daughter are away overnight tomorrow so here's my plan.  it's a simple salad relying on really fresh salad and hoping that the avocado is ripe....... and there will be left overs for lunch on Tuesday.





Ingredients
Mini chorizo sausages, 8
Cherry tomatoes, enough for two
1 ripe avocado
1 ball of mozzarella
Salad leaves of your choice
White wine vinegar 1tbsp
Dijon mustard, 1 teasp
Olive oil
Crusty bread.

Cut the chorizo in half horizontally and cook through.  Very quickly sear the tomatoes in the same pan, seasoning lightly.
Halve the avocado and scoop out onto the serving dish.  Tear the cheese and add to the serving dish.  Add the salad leaves, then the tomatoes and chorizo.  Whisk the vinegar, mustard and 2 teasp oil, season and add to the salad and toss until coated. Serve with crusty bread and a cheeky glass of white wine.
