Mozzarella, parma ham and squashed peaches salad

My lovely husband is on his way back from Belgium so I thought I'd treat him to a lovely light lunch in the sunshine.  This could easily be a supper dish too.  The peaches I'm using are so luscious.  The proper name I'm told by Jeremy is flattened or doughnut peaches.  So, a no cooking meal that only involves ripping the ingredients apart, placing them at a jaunty angle and drizzling over the scrumptious dressing.  If you look to the right of the photo you can just about see the flattened peach next to the nectarines and sweet peas.



Ingredients for 2 
1 pack of parma ham
2 flattened peaches
1 ball of buffalo mozzarella, I'm using Campana Felix
Dressing
3 tbsp extra virgin olive oil
1 and a half tbsp lemon juice
1/2 tbsp good quality honey
Salt and pepper to taste
Basil to garnish.

Method
Drain the mozzarella and tear into bite sized pieces and arrange on a serving dish.  Do the same with the parma ham.  Gently wipe the peaches with a damp cloth and then break them into mouthwatering chunks.  Finally, mix together the dressing ingredients and drizzle over the salad with some ripped basil leaves as garnish.
