I've made basic chilli con carne and I posted the recipe a while ago except this is a speedier version cutting down cooking times and hoping that the flavour of the ingredients will sing through and added a beef stock cube for instant flavour. As extras I've added asparagus cut into 1 cm chunks and left over red pepper and fresh coriander because it's going bonkers in the garden.

Mex a con chips!
This has to be my busy mum throw it in the pan supper.... I'm whacked but have to use up spare veg, mince and fancy a few chips on the side too. Please don't tell the food police but I have used Mc Cain Really Gorgeous Chips. They are so good!
