Roast Chicken and Make it Yourself Sunday Salad. It's a Wrap!

Our lovely teenager went on a sleep over last night, the result being that she is now in bed catching up on sleep!  Hubby is on his hols with the boys playing golf in Cornwall, So, it's been a really quiet day so far.  I've been on a very muddy walk with Pepper and then pottered in the kitchen.  My glut of spinach and wild garlic has been blanched, bagged and frozen and will be used in curries as a secret vegetable!



Tonight's supper is hardly even a recipe but I thought I'd post it anyway.  I'm going to roast a small chicken in the microwave on combination mode so it is beautifully crispy but only takes about 25 minutes.  It will be smothered in rapeseed oil, cracked black pepper, herbs and sprinkled with sea salt.  I'll take it off the bone before serving or perhaps just let the two of us help ourselves with lovely left overs for tomorrow.  To go with it I've made a salad of carrot, sweetcorn, celery, cucumber, lettuce, cress, black olives and asparagus.  I couldn't find any pitta bread in Tesco Express so I bought wraps instead.  The plan is to stuff the wraps with juicy chicken and salad and add sauce, be it mayo or salad dressing and tuck in.
